The 2023 vintage produced classic, structured wines
After a warm, dry winter in 2022, the vineyards experienced a mix of conditions throughout the growing season. Humidity was unusually high, creating some challenges in the vineyards, while much-needed rain arrived in December just as the grapes were entering veraison. Then, in a final twist, unexpected rainfall arrived during harvest in March.
In the cellar, once fermentation was completed after 5 days in open concrete fermenters, the final Paul Sauer blend was carefully crafted from 62% Cabernet Sauvignon, 23% Cabernet Franc, and 15% Merlot. The wine was then transferred to new 225-litre French oak barrels for 24 months. This extended time in the barrel allowed the individual components to come together harmoniously, developing depth and structure. After barrel maturation, the wine was then bottled and aged for another year in anticipation of its release on 1 July 2026.

What to expect from the Kanonkop Paul Sauer 2023
Despite its challenges, this vintage produced a wine with remarkable freshness, balance, and longevity. It carries the classic structure and depth that Paul Sauer is known for, but with an added sense of vibrancy and precision that brings to mind standout vintages such as 1997.
